In the button’s editor I see options for icon size and colour, but how do I add the icon to the button on the editor page?

This page (Style tab) is to change these settings globally. I guess even if the icon size can be updated globally for each button. It doesn’t make sense to set the same icon for every button in the system. That’s why icon is not here. You can set icon per each button in the editor:
