After hearing back from Bubble support and an engineer it seems the setup provided by Bubble is ‘free-form’ as described by an engineer.

Basically the Organizer input is not properly setup to be recognized by all email clients. The only email client the engineer was able to comment on was gmail, and for that you need to only use an email address in the Organizer input.

When using the email address in the Organizer input, my yahoo emails still showed the recipient email address, not the email address in the Organizer input field.

So, it seems the Organizer filed is not really optimized or setup properly to be supported across email clients. The engineer was not sure why yahoo emails only showed the recipient email address and not the email address in the Organizer field.

Guess, just need to wait for it to be a priority to configure properly.
