I’d like to create a “Contact Us” submission form, the way many sites do it where the site visitor provides their email and a message, then it gets sent to the company’s email address. How would I set it up for me to get the emails once the forms are submitted?

Yes! Simply build the form, then use the “Send Email” action. The “To” field would be your company email address, you’d check the “Reply-To” field and make the field the Input’s Email.
In the subject you can have it formatted something like, “New Request - Name” then have the body be the message or whatever you’d like.
