I can’t find how to take down a site that is currently live? I don’t want to delete the app. Ideally I can unpublish the site and park the app on a free plan so I don’t lose the work I’ve done on it.

You can change to free plan. Nothing will be lost and app will not be live anymore. But you will not be able to add more data as DB is limited to 200 items.
