Is there a way to prevent certain pages from being deployed?

I have a few ‘test’ pages that I want to prevent from going live, as the potentially open security holes if someone knew how to get to them.

Is there an easy way to do this?

No but you can just make it where only a logged in user with role as admin can access that page.
