Bubble backups only go back a very limited number of days depending on your tier - ie 2 days for the database and logs if you are on a Starter plan. - if you need unlimited backups and restore of Data/App/Logs/Files - consider planbbackups.io

So you likely can only restore to within the last 2 days (14 on the Growth plan)
