Restrict access to the app database for the maker

Hey everyone, complete noob here.

Do I, as the app maker, have access to the entirety of the data stored in the database ? Let’s say I want to be unable to read private messages and user health information, is there a way I can set the fields so I can’t ever read their contents ?
