So I hear the goo.gl shortening service is being shut down. Anybody have any ideas on how to replace this function within the Bubble apps with an equivalent?
I think there is a Rebrandly plugin for bubble. Rebrandly worked well for me, but if you want more robust behavior like app deep links, then branch.io is the way to go. They have a good api, so should not have a problem making it work with the api connector.

But also, it is April first, so I’m not sure goo.gl is going away. 
It was reported before April 1st. But yeah, existing links will continue to work, you just won’t be able to manage them after March 30, 2019.
Makes sense…short links have become much more than shortners.
