Identify weeks (Mon-Sun) from 2 dates and create new things automatically

Hi,
I have 3 Things - Project, Person, Resource Planning
The business logic is when I create a new Project, I’ll assign People to work on the project, and I’ll calculate cost & profitability through Resource Planning.

Long story short, I’d like the app to identify the weeks between the 2 dates, even if Project start date is Tuesday 08/11, the week would still start Monday 07/11, see examples below.
If the range of start-end dates span across 3 weeks, I need 3 entries created (which I assume we’ll need the recurring event?).
Is there a way to achieve this with a backend workflow without a plugin?

*Projects have a start date and an end date

*People have a daily rate (cost)

*Resource Planning have the cost based on how many days they work through the week
