I want the user to enter data into the application and, when clicking on send, a PDF with the data entered will be created and sent by email to the office employee

There are a lot of different ways to do this. It really depends on how you want your PDF to look.
You can use https://bubble.io/plugin/pdf-conjurer-1543086664409x454646894723334140 although it’s a little hard to use.
or
SelectPDF in the Plugins from Bubble
or
https://bubble.io/plugin/bubble-page-to-pdf-converter-1526888373861x305666508856229900 if you don’t care about having a high quality PDF, just cheaper.
On the second two options you need to create a page to display the information that you will print from.
Then send an email and attach the pdf to the email in the workflows using ‘send an email’ option.
