API Connector - example

I’m attempting to use the API Connector, but can’t get any API requests to work. Does anyone have a good example of a REST API that is known to work so I can do some testing?

Note: I do have a good amount of experience using APIs in other software so I can handle a little complexity

https://www.coingecko.com/en/api/documentation worked with it just a couple of minutes ago. Also no authorization required.
