Would be great if we could set dynamic defaults here:
This way we can set some default text, and or dynamic text that calls from the data within the Thing itself.

I don’t think this is possible…storing data in the database using some kind of dynamic value as selected by a user before a user selects a value doesn’t seem like it would be capable of being done…also if it were to be a reference to some kind of inputs value from a page on your app, that just seems like way to complex of a task to search the entire apps elements by type to extract a dynamic value from it
What is your use case? There are ways to use custom states to have dynamic default text
and then after that is set, you can use the custom state value to update your database through a workflow
Or you might be able to do what you are trying using option sets, but not sure what you are attempting.
