Is there any plugin available that supports uploading files from PDF, Google Docs/CSV, Google Drive, and Notion?
You can definitely upload local files in all those formats using bubbles file uploader element.
You can also use various plugins to handle the Oauth for Google Drive, Notion or you can set these up manually in the API connector. Are you allowing users of your app to access there google drives, or is this just to link with your personal google drive?

I haven’t done notion before, and I usually setup all of my API calls up in the API connector rather than using plugins but you could give this a go:

What do you mean by trackers? By using the API connector?
Anything by them tracks not only you, but your users.
I believe every api service/plugin tracks and caches data passed through.
