How long would you say is “too long” spending time on building your MVP using bubble? Ideally how long would you say one should take to build their applications from scratch and roll out?

I think this really depends on the person and their personal goals. Some people might have the ability to pull all-nighters for one week and finish building their app. Others might spend a month to build an MVP.

It depends on your own timeline. Good practice is to have a clear definition of what you want your MVP to comprise of.
Have a clear list of features that should be ready so you don’t fall into the trap of adding new feature after new feature then end up never meeting your MVP requirements. You can always add stretch goals in your planning if you do end up ahead of schedule.
Define your budget for your MVP and add a small percentage for unexpected costs.
If you have a business partner, discuss with them what amount of time and money they are willing to spend on an MVP.
