Planing complex apps

Hello guys, im currently planing a pretty complex app and stuck in struggle with structure.

So do you got some tips how to plan the process of this built?

First Database right? Are there some tools that help me get this database concept on paper or are there some docs with database templates of app “categories”?

Would be thankful for every helpful tipp! Also some tips how to get a tight plan wich i have to follow everyday, so im not loosing in any useless details…
