Does it seem the same to any of you who don’t use English? I also sent a report to support but it causes me problems because for example the date selector is in English of course.. This only happens on iOS.
To confirm what I say, I went to TestFlight and clicked on my latest build. From the screen at the bottom you can see that the metadata is set when you build the app in English unfortunately and this bypasses the Apple Store Connect settings.
I had reported it months ago but the support had told me that it had been a bad configuration on my part of the app, but the screen shows that it is the info.plist file that is the problem..
The support team’s response to this a few months ago was:

I’ve just got an update from the team regarding your concern. Our engineering team looked into this behavior further and identified that this user was likely impacted by an edge case.
In our latest efforts to validate the problem, we don’t seem to be able to reproduce the behavior. Furthermore, we haven’t received any other reports of apps being published to the App Store with the incorrect language.
It’s possible that the underlying problem has been resolved on its own or through our engineering team’s overall efforts to improve the mobile platform.
Although we won’t be able to change the language shown for your app in the App Store, you shouldn’t experience this behavior with new apps that aren’t deployed to an already existing app in the App Store.

I reported it to the team and they had flagged it as a limit case.. but it is clear that the plist file of our apps is in English as I showed.. and you did it too.. I send your answer to the support team..
They just told me that they will report to the team again since they also found other apps with the same problem (they shouldn’t be in English, but they are). Thanks for the feedback it helped to get him reviewed!
However, I would like to bring this story to your attention. @fede.bubble@nick.carroll . You know how much I care about the bubble and how much I appreciate the work that has been done to put the mobile up.
However, it amazes me that the engineers dismissed me the first time as a borderline case. It was enough to look at the plist file to understand that the problem was there. This is not professional. I would have liked to have an answer like, we identified it, but we have other priorities now we will fix it (as for example it was done with custom markers on android)..
Our engineers have been investigating this further and attempted to identify any iOS apps displaying a primary language other than English in the App Store. So far, they haven’t found any examples of this behavior, which suggests that this may not currently be supported — or may be an unimplemented capability on our end.
As a result, the team has created an internal ticket to add this to their backlog as a planned fix. While I don’t have a timeline to share just yet, it is now on their radar again and officially slated to be addressed in the future.
