So am wondering if bubble can fit a SAAS apps that we need to build such as POS service or an HR module

Bubble can definitely be used to create either of these. It would take careful consideration of the user experience and user interface to give them a chance to be successful on the market. And a lot of effort off Bubble to become a success story.
Otherwise, yes, Bubble has all the tools and capabilities to build a POS or HR module. For POS though I’d worry about the issue of not have ‘offline’ capability as that is essential to any POS used in industries.
