I’m a total noob so apologies if this has been answered already. I’m currently designing an app for IOS and not sure what dimensions to use? Do I change the page size itself or the icons?

No problem. We were all new once! 
You need to make your page responsive. Then it will fit any size screen. Some people struggle with this, but it’s not too difficult once you understand the concept.
