I’m using FullCalendar and I’m looking to make a date picker that allows users to see which days have available appointments. Is this possible? (some examples of type of functionality I’m hoping for below)

You could use elements from the full calendar scheduler suite to do this. The UI you have shown us also possible using custom bubble elements in conjunction with plugin elements.
