For some reason, my dates won’t save and I don’t know where I’ve gone wrong in the data setup.
Essentially, whenever a group member is assigned a task, I want to assign a due date as well. I’ve manually created mock data to see how things render, but the “date” part disappears after trying to type it in. What am I doing wrong?

I guess that you have a flow where you click a button that creates a thing with various fields coming from inputs and among them a date field.
If you still have problems seeing the created thing and its fields in the app data tab of the database, perhaps you can adapt the database view to accomodate for the fields that you want to view. Here is link to that explains database views in the Bubble manual
