I don’t like the existing template, how do I exchange a new template into the current project

You can’t ‘change’ a template on an app…

A template is effectively a pre-built app… or at least the starting point for one.

If you want/need to you can copy/paste parts of one template into another… but be prepared to fix a lot of issues caused by mismatches in database/option sets/plugins/API call/Reusable elements etc. (although the new ‘Copy to another app’ feature may address some of those).
