Hello!
Think i’ve found a bug with the standard bubble dropdowns.
Also, is there any reason we cant pick the colour of the choice or default value? We can only change the colour of the placeholder. There is no workaround in conditional formatting either.

This might still be a bug. Dropdown placeholder text won't change color
I think it is safe to say you can go ahead and report it to Bubble.

Ahh ok, it sounds like they’re onto it then. I hope they get the alignment working at the same time.
If it’s still no good in a week i’ll submit a bug report.

I would still report it since they need to know. They recently updated it so go ahead a do the bug report.
