Reset relevant inputs only seems to reset the inputs that were used to save data. Which makes sense. Does anyone know how to reset inputs when the inputs value is not saved? I’d like to have an “X” icon that resets the inputs value.

Put the input in a group, name it something you can find, and do the Reset a group/popup action

No problem 
If you have some other workflow where you use the Display data in group/popup action and set it to a specific Thing you can “clear that out” with the reset action. This will not reset custom states on that element though.
