Is there a way I could send my mobile users to a complete different version of my site ?
Like could I sense it’s a mobile and redirect to a different version of the page?
Working with the responsive editor to make every element behave how I want is just years of work.
So I would be better if just creating the mobile version and having the user redirect there?

Yes! Create a new page with your mobile widths and on the desktop version of the page, indicate the mobile version in the property editor:
When users access the desktop version on a mobile device, they’ll get redirected to the page you set here.
