I have a workflow to send email to a list, using the User table. Is it possible to run this same workflow on a different table? Contacts for example.

My suggestion would be to have a custom event or another api workflow that is triggered by your workflow and passes only the information required to send an email. That way sending the email is separate from the workflow with the type and you can send whatever you want from wherever you want
