can anyone share the proper way to pass fees along to a customer on behalf of seller whilst also passing along the platform fee? So basically, if the price is $1000, the seller gets $1000, stripe gets its fee(what ever that is) and the platform gets its fee…flat, percentage or both…

Depending what type of connected account you used (express, standard, custom) depends on your flexibility. I’d recommend standard for most b2b cases express for b2c cases (like Uber)
I’d recommend rather than doing on behalf of actually charging through the connected account and applying a “application fee”
This will put the stripe fees on your user as well.
